Crispy, golden chicken cutlets with a Parmesan-panko crust made in the air fryer. This recipe offers a quick and healthy weeknight meal option.

  • 2 boneless, skinless chicken breasts, cut into 4 cutlets
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1 tablespoon olive oil spray

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a shallow dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  3. Dip each chicken cutlet into the beaten egg, ensuring it’s fully coated.
  4. Press the egg-coated cutlet into the panko mixture, coating both sides evenly.
  5. Place the coated chicken cutlets in the air fryer basket in a single layer. You may need to cook in batches.
  6. Lightly spray the tops of the chicken with olive oil.
  7. Air fry for 10-12 minutes, flipping halfway through, until the chicken is golden brown and cooked through (internal temperature reaches 165°F or 74°C).
  8. Serve immediately with your favorite dipping sauce or over a salad.

Notes

  • For extra crispiness, you can double-dip the chicken: egg, then panko, then egg again, then panko.
  • Serve with marinara sauce, ranch dressing, or a lemon-herb aioli.
  • This chicken is also excellent crumbled over Caesar salad.
