  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sweetener (optional, to taste)
  • 2 large eggs
  • 1 1/2 cups unsweetened almond milk (or milk of choice)
  • 1/4 cup melted unsalted butter or coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the almond flour, baking powder, salt, and sweetener if using.
  2. In a separate bowl, whisk the eggs, almond milk, melted butter or coconut oil, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a lightly oiled griddle or non-stick pan over medium heat.
  5. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve immediately with your favorite toppings.
