3 pounds apples (about 6–8 medium), such as Honeycrisp, Fuji, or Gala
1 cup water
1 cup granulated sugar (or to taste)
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1 tablespoon lemon juice
Instructions
Prepare the apples: Wash the apples. You can peel them if you prefer a smoother texture, or leave the peels on for extra fiber and color. Core and quarter the apples.
Cook the apples: In a large pot or slow cooker, combine the apples and water. Cook over medium heat on the stovetop or on low in the slow cooker until the apples are very soft, about 1-2 hours on the stovetop or 4-6 hours in the slow cooker.
Mash the apples: Mash the cooked apples with a potato masher or immersion blender until mostly smooth. If using a blender, be careful as the mixture is hot.
Add spices and sugar: Stir in the sugar, cinnamon, cloves, allspice, and lemon juice.
Simmer and thicken: Cook uncovered over low heat on the stovetop, stirring occasionally, until the apple butter has thickened to your desired consistency, about 1-3 hours. If using a slow cooker, set it to high and cook uncovered, stirring occasionally, until thickened, about 1-2 hours.
Jar the apple butter: Ladle the hot apple butter into clean jars, leaving 1/4 inch headspace. Process in a boiling water bath for 10 minutes for half-pint or pint jars.
Notes
For a smoother apple butter, you can strain the cooked apples through a food mill or sieve before adding the sugar and spices.
Adjust the sugar and spices to your personal preference.
Apple butter can be stored in the refrigerator for up to 3 weeks if not canned.
Ensure your jars and lids are sterilized before filling.
