4 cups thinly sliced apples (about 4 medium)
1 tablespoon lemon juice
1/4 cup pure maple syrup
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup rolled oats
1/2 cup chopped almonds
1/4 cup almond flour
1/4 cup melted coconut oil
1 tablespoon pure maple syrup
1/2 teaspoon ground cinnamon
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, toss the sliced apples with lemon juice, 1/4 cup maple syrup, 1 teaspoon cinnamon, and nutmeg. Pour the apple mixture into an 8×8 inch baking dish.
In a separate bowl, combine the rolled oats, chopped almonds, almond flour, 1/4 cup coconut oil, 1 tablespoon maple syrup, and 1/2 teaspoon cinnamon. Mix until well combined.
Evenly sprinkle the oat and nut topping over the apples.
Bake for 30-35 minutes, or until the topping is golden brown and the apples are tender.
Let cool slightly before serving.
