  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 cup buttermilk
  • 2 cups peeled, cored, and diced apples (about 3 medium apples)

  • For the Glaze:
  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or a 10-inch Bundt pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and allspice.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry mixture. Mix until just combined. Do not overmix.
  5. Gently fold in the diced apples and pecans, if using.
  6. Spread the batter evenly into your prepared pan.
  7. Bake for 45 to 55 minutes, or until a wooden pick inserted into the center comes out clean.
  8. While the cake bakes, prepare the glaze. In a small saucepan, melt the 1/2 cup butter and brown sugar over medium heat. Stir constantly until the sugar dissolves and the mixture bubbles.
  9. Remove the saucepan from the heat. Stir in the heavy cream, vanilla extract, and a pinch of salt. Mix well.
  10. Once the cake is done, let it cool in the pan for 10 minutes. Poke holes all over the top surface of the warm cake using a skewer or fork.
  11. Slowly pour the warm caramel glaze evenly over the entire top of the cake, allowing it to soak into the holes.
