  • 1 teaspoon vanilla extract

  • 1 cup finely diced apples (like Honeycrisp or Gala)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons caramel sauce, for drizzling (optional)
  • 1/4 cup powdered sugar, for dusting (optional)

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. In a small bowl, combine the diced apples, brown sugar, cinnamon, and nutmeg.
  6. Gently fold the apple mixture into the cookie dough.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, about 2 inches apart.
  8. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, drizzle with caramel sauce or dust with powdered sugar, if desired.

Notes

  • For chewier cookies, slightly underbake them.
