Ingredients
Scale
1 box yellow cake mix
1 1/4 cups unsweetened applesauce
1/2 cup vegetable oil
3 large eggs
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 can (21 ounces) apple pie filling
1 cup (2 sticks) unsalted butter, softened
3 cups powdered sugar
1/4 cup milk
1 teaspoon vanilla extract
Optional garnishes: caramel sauce, chopped nuts, graham cracker crumbs
Instructions
Preheat your oven to 350°F (175°C). Line a 24-cup muffin tin with cupcake liners.
In a large bowl, combine the cake mix, applesauce, vegetable oil, and eggs. Mix until well combined.
Stir in the cinnamon, nutmeg, allspice, and cloves.
Spoon about 1 tablespoon of batter into each cupcake liner.
Top each with about 1 tablespoon of apple pie filling.
Spoon another tablespoon of batter over the filling, ensuring it’s mostly covered.
Bake for 20-25 minutes, or until a toothpick inserted into the cake portion comes out clean. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy.
Gradually add the powdered sugar, alternating with the milk, beating until smooth and fluffy.
Stir in the vanilla extract.
Once the cupcakes are completely cool, frost them generously with the cinnamon buttercream.
Garnish as desired with caramel sauce, chopped nuts, or graham cracker crumbs.
Notes
For a quicker filling, you can use pre-made apple pie filling.
Adjust spice levels to your preference.
Ensure cupcakes are fully cooled before frosting to prevent the frosting from melting.
These cupcakes are a great make-ahead dessert for parties.
