Make Starbucks-style bacon gruyere egg bites at home with this easy blender recipe. Achieve a silky, custardy texture perfect for meal prep.

  • 6 large eggs
  • 1 cup full-fat cottage cheese
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Gruyere cheese
  • 4 slices bacon, cooked and crumbled

Instructions

  1. Preheat your oven to 300°F (150°C). Grease a 12-cup muffin tin or silicone egg bite molds. If using a muffin tin, place it inside a larger baking pan.
  2. In a blender, combine the eggs, cottage cheese, milk, salt, and pepper. Blend until completely smooth and creamy.
  3. Stir in the shredded Gruyere cheese and crumbled bacon into the blender mixture. Pulse a few times to combine, but do not over-blend.
  4. Pour the mixture evenly into the prepared muffin cups or molds, filling each about two-thirds full.
  5. If using a muffin tin, carefully pour hot water into the larger baking pan, reaching about halfway up the sides of the muffin cups. This creates a water bath for even cooking.
  6. Bake for 20-25 minutes for silicone molds, or 25-30 minutes for a muffin tin, until the egg bites are set and a toothpick inserted into the center comes out clean.
  7. Let the egg bites cool in the pan for a few minutes before carefully removing them.

Notes

  • For a smoother texture, ensure your cottage cheese is full-fat and blended thoroughly.
  • You can substitute Gruyere with Swiss cheese or cheddar.
  • For a low-carb option, omit the milk or use a low-carb milk alternative.
  • Store cooled egg bites in an airtight container in the refrigerator for up to 4 days.
  • Reheat gently in a microwave or toaster oven.
