Make these crowd-pleasing Bang Bang Chicken Skewers on the grill for a quick, flavorful dinner or appetizer. The chicken stays juicy while being coated in a creamy, spicy, sweet sauce.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 12 wooden or metal skewers (if using wood, soak them for 30 minutes)
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (adjust to your heat preference)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or brown sugar
  • 1/4 teaspoon ginger powder
  • Optional garnish: chopped green onions, sesame seeds

Instructions

  1. Prepare the chicken: In a bowl, toss the cubed chicken with olive oil, salt, pepper, garlic powder, and paprika. Thread four to five chicken pieces onto each soaked skewer.
  2. Make the Bang Bang Sauce: In a separate small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, sesame oil, honey, and ginger powder until completely smooth.
  3. Marinate (Optional but recommended): Brush half of the sauce mixture over the chicken skewers. Let them marinate for at least 15 minutes while you prepare the grill. Reserve the remaining sauce for basting and serving.
  4. Preheat the grill: Heat your grill to medium-high heat (about 400°F). Clean and lightly oil the grates.
  5. Grill the skewers: Place the skewers on the hot grill. Cook for 4 to 6 minutes per side, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Baste: During the last minute of cooking, brush the skewers lightly with some of the reserved sauce. Do not baste too early, as the sugar in the sauce can burn.
  7. Serve: Remove the skewers from the grill. Brush with a little more of the reserved sauce if desired. Garnish with chopped green onions and sesame seeds. Serve immediately with extra sauce for dipping.

Notes

  • For an oven-baked option, arrange skewers on a foil-lined baking sheet and bake at 400°F for 18-20 minutes, flipping halfway.
  • To make this a complete weeknight dinner, serve the skewers over steamed rice or alongside a simple Asian slaw.
  • If you prefer a tangier sauce, add a teaspoon of lime juice to the sauce mixture.
