Easy Beef Taco Casserole

A simple, layered Tex-Mex casserole with ground beef, beans, tortillas, and cheese, perfect for weeknight dinners.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 ounces) refried beans
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 8 corn tortillas, cut into wedges
  • Optional toppings: salsa, avocado, cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
  3. Stir in the taco seasoning and 1/4 cup of water. Cook according to seasoning packet directions.
  4. In a bowl, mix the refried beans, diced tomatoes and green chilies, and sour cream.
  5. Spread half of the bean mixture in the bottom of a 9×13 inch baking dish.
  6. Layer half of the tortilla wedges over the bean mixture.
  7. Spoon the seasoned ground beef over the tortillas.
  8. Spread the remaining bean mixture over the beef.
  9. Top with the remaining tortilla wedges.
  10. Sprinkle both cheeses evenly over the top.
  11. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  12. Let stand for 5 minutes before serving. Add your favorite toppings.

Notes

  • For a make-ahead option, assemble the casserole, cover, and refrigerate for up to 24 hours. Bake as directed, adding a few extra minutes to the cooking time.
  • To freeze, assemble the casserole, cover tightly with plastic wrap and then foil. Freeze for up to 3 months. Thaw overnight in the refrigerator and bake as directed.
  • You can also adapt this recipe for a slow cooker. Brown the beef and mix with taco seasoning. Layer all ingredients in the slow cooker, starting with the bean mixture, then beef, then tortillas, then cheese. Cook on low for 4-6 hours or on high for 2-3 hours.
