A quick and easy low-carb salad that captures the classic Big Mac flavor with seasoned ground beef, fresh lettuce, pickles, and a creamy homemade special sauce.

Ingredients

  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 head iceberg lettuce, shredded
  • 1/2 cup dill pickle slices, chopped
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced white onion

Instructions

  1. Cook the ground beef in a skillet over medium-high heat. Season with salt and pepper. Drain excess grease.
  2. In a small bowl, whisk together mayonnaise, sweet pickle relish, yellow mustard, white vinegar, paprika, onion powder, and garlic powder to make the special sauce.
  3. Assemble the salad by layering shredded lettuce, cooked ground beef, chopped pickles, shredded cheddar cheese, and diced onion in a bowl.
  4. Drizzle the special sauce over the top.

Notes

  • For meal planning, prepare the special sauce and cook the ground beef ahead of time. Store separately and assemble just before serving.
