Make this hearty, flavorful Mexican black beans and rice dish in a single pot. It uses a simple sofrito base for deep flavor, making it perfect for a weeknight dinner or a satisfying vegetarian main course.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup long-grain white rice, uncooked
  • 2 cups vegetable broth
  • 1/2 cup water
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges (for serving)
  • Optional toppings: Cotija cheese, sliced avocado, salsa

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and bell pepper. Cook until softened, about 5 to 7 minutes.
  2. Add the minced garlic, cumin, chili powder, and oregano to the pot. Cook for 1 minute until fragrant.
  3. Stir in the rinsed black beans, uncooked rice, vegetable broth, and water. Add the salt and pepper.
  4. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot tightly, and simmer for 20 minutes without lifting the lid.
  5. Remove the pot from the heat and let it stand, covered, for 10 minutes. Do not remove the lid during this resting time.
  6. Fluff the rice and beans gently with a fork. Stir in the fresh cilantro.
  7. Serve hot with lime wedges and your choice of toppings like cotija cheese or salsa.

Notes

  • For a spicier dish, add 1/4 teaspoon of cayenne pepper with the other spices.
  • If you prefer a cilantro lime rice flavor, add the zest of one lime along with the cilantro at the end.
  • This recipe makes a great vegetarian main dish or a hearty side dish for grilled chicken or steak.
