Ingredients
Scale
1 loaf (about 1 pound) thick-cut bread (like challah or brioche), cut into 1-inch cubes
2 cups fresh or frozen blueberries
6 large eggs
2 cups milk (whole or 2%)
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup maple syrup (for the custard)
2 tablespoons butter, melted (for greasing)
Optional Topping: 1/4 cup powdered sugar for dusting
Instructions
Lightly grease a 9×13 inch baking dish with melted butter.
Arrange the bread cubes evenly in the prepared baking dish. Sprinkle the blueberries over the bread.
In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, cinnamon, nutmeg, and maple syrup until well combined. This creates your rich custard base.
Slowly pour the egg mixture evenly over the bread and blueberries in the baking dish, making sure all the bread soaks up the liquid. Gently press down on the bread with a spatula to help it absorb the custard.
Cover the baking dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight, to allow the bread to fully absorb the custard.
When ready to bake, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the plastic wrap.
Bake uncovered for 45 to 55 minutes, or until the casserole is puffed, golden brown on top, and the center is set (no liquid remains when poked).
Let the casserole rest for 10 minutes before serving. Dust with powdered sugar, if desired, and serve warm with extra maple syrup.
Notes
For a tangier flavor, add 1 teaspoon of lemon zest to the custard mixture.
If you use frozen blueberries, do not thaw them before adding them to the bread.
This casserole reheats well; cover leftovers loosely with foil and warm in a 325 degree oven until heated through.
