  • 1 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 pint cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tbsp balsamic glaze
  • Optional: shredded mozzarella cheese for topping

Instructions

  1. Season chicken pieces with Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. While chicken cooks, prepare the bruschetta topping: In a small bowl, combine halved cherry tomatoes, chopped basil, minced garlic, and balsamic glaze.
  5. Once chicken is cooked, spoon the bruschetta mixture over the chicken in the skillet.
  6. If desired, sprinkle with mozzarella cheese and let it melt for a minute or two.
  7. Serve immediately.
