Ingredients
Scale
1 pound short pasta (rotini or penne)
2 large boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 head romaine lettuce, chopped
1/2 cup grated Parmesan cheese
1/2 cup Caesar dressing (store-bought or homemade)
1/4 cup homemade croutons (optional)
Instructions
Cook the pasta according to package directions until al dente. Drain the pasta and set it aside to cool slightly.
While the pasta cooks, season the chicken breasts with olive oil, garlic powder, salt, and pepper.
Cook the chicken in a skillet over medium heat until fully cooked (internal temperature reaches 165 degrees F). Let the chicken rest for 5 minutes, then dice or shred it.
In a large bowl, combine the cooled pasta, chopped romaine lettuce, cooked chicken, and grated Parmesan cheese.
Pour the Caesar dressing over the mixture. Toss gently until everything is evenly coated.
If using, stir in the croutons just before serving.
Chill the salad for at least 30 minutes before serving to allow the flavors to blend.
Notes
For the best flavor, use grilled chicken instead of pan-fried.
This salad keeps well for up to 3 days in the refrigerator, making it a great make ahead Caesar pasta salad option.
If you prefer a tangier flavor, add 1 teaspoon of fresh lemon juice to the dressing when mixing.
