Ingredients
Scale
2 large boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and black pepper to taste
4 large flour tortillas (or low carb wraps)
2 cups chopped romaine lettuce
1/2 cup grated Parmesan cheese
1/4 cup homemade Caesar dressing (recipe below)
1/2 cup croutons (optional)
Instructions
Prepare the chicken: Rub chicken breasts with olive oil, salt, and pepper. Grill or pan-sear over medium-high heat for 6-8 minutes per side, until cooked through (internal temperature reaches 165°F). Let the chicken rest for 5 minutes, then slice or dice it.
Make the dressing (if making homemade): Combine 1/2 cup mayonnaise, 2 tablespoons lemon juice, 1 teaspoon Dijon mustard, 1 clove minced garlic, 1/4 cup grated Parmesan cheese, 1 teaspoon Worcestershire sauce, and 2 tablespoons water (or more for desired consistency). Whisk until smooth.
Warm the tortillas: Heat the tortillas briefly in a dry skillet or microwave until pliable.
Assemble the wraps: Lay a tortilla flat. Spread about 1 tablespoon of Caesar dressing down the center. Layer with sliced chicken, romaine lettuce, Parmesan cheese, and croutons, if using.
Wrap tightly: Fold in the sides of the tortilla, then roll tightly from the bottom up. Slice in half and serve immediately.
Notes
For meal prep caesar wraps: Prepare the chicken and dressing ahead of time. Store them separately. Assemble the wraps just before eating to keep the lettuce crisp and prevent the tortilla from getting soggy.
For a healthy caesar chicken wrap option, use whole wheat or low carb tortillas.
If you need a quick option, use rotisserie chicken instead of grilling fresh chicken.
