Create irresistible sweet and salty holiday treats quickly with this no-bake recipe featuring buttery crackers, gooey caramel, and chocolate. These are perfect for cookie exchanges or last-minute gifting.

  • 1 sleeve (about 30) Ritz Crackers
  • 1 cup caramel candies (unwrapped) or soft caramel sauce
  • 2 tablespoons butter
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup white chocolate chips (optional, for drizzling)
  • 1 teaspoon coconut oil (optional, for melting chocolate)
  • Festive sprinkles (optional)

Instructions

  1. Line a baking sheet with parchment paper. Arrange the Ritz crackers in a single layer on the prepared sheet.
  2. In a small saucepan over medium-low heat, combine the caramel candies and butter. Stir constantly until the candies are completely melted and smooth. If using caramel sauce, warm it gently with the butter.
  3. Spoon about one teaspoon of the warm caramel mixture evenly over the top of each Ritz cracker.
  4. Place the baking sheet in the refrigerator for 10 minutes to allow the caramel to set slightly.
  5. While the caramel sets, melt the semi-sweet chocolate chips. You can do this in a microwave-safe bowl in 30-second intervals, stirring between each, or over a double boiler. Stir in the coconut oil if using to thin the chocolate slightly.
  6. Drizzle the melted semi-sweet chocolate over the set caramel layer on the crackers.
  7. If using white chocolate, melt it separately and drizzle it over the semi-sweet chocolate for decoration.
  8. Immediately top the chocolate with festive sprinkles, if desired.
  9. Return the cookies to the refrigerator for 15 to 20 minutes, or until the chocolate is completely firm.
  10. Store the finished cookies in an airtight container at room temperature or in the refrigerator.

Notes

  • For an extra salty kick, sprinkle a tiny pinch of flaky sea salt over the caramel before adding the chocolate.
  • If you want to make these into bars instead of individual cookies, press the crackers into a foil-lined 9×13 inch pan, pour the caramel over them, and then top with chocolate before cutting once set.
  • These are excellent for cookie swaps because they hold up well for transport.
