  • 1 medium head of cauliflower (about 2 lbs), washed and trimmed
  • 1 tablespoon olive oil or butter

Instructions

  1. Prepare the cauliflower: Cut the cauliflower into florets. Place the florets into a food processor. Pulse the cauliflower until it resembles grains of rice. Do not over-process, or it will become mushy.
  2. Cook the rice: Heat the olive oil or butter in a large skillet over medium-high heat.
  3. Add the pulsed cauliflower rice to the hot skillet. Spread it in an even layer.
  4. Cook for 5 to 7 minutes, stirring occasionally, until the moisture has evaporated and the rice is tender-crisp. Avoid stirring constantly to allow some evaporation.
  5. Season with salt and pepper. Stir once more and remove from heat.
