A creamy, one-dish chicken, bacon, and ranch casserole that’s perfect for a weeknight family dinner. This recipe is easy to prepare and can be made ahead.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces bacon, chopped
  • 1 (16 ounce) package pasta (penne, rotini, or elbow macaroni)
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (1 ounce) packet dry ranch seasoning mix
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup panko breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook pasta according to package directions. Drain and set aside.
  3. In a large skillet, cook chopped bacon until crisp. Remove bacon with a slotted spoon and drain on paper towels. Reserve about 2 tablespoons of bacon grease in the skillet.
  4. Add chicken pieces to the skillet with the reserved bacon grease. Cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  5. In a large bowl, whisk together the condensed cream of chicken soup, dry ranch seasoning mix, milk, sour cream, and mayonnaise until smooth.
  6. Add the cooked pasta, cooked chicken, and most of the cooked bacon to the sauce. Stir to combine.
  7. Pour the mixture into a greased 9×13 inch baking dish.
  8. Top with shredded cheddar cheese and the remaining bacon. If using, sprinkle panko breadcrumbs over the top.
  9. Bake for 20-25 minutes, or until the casserole is hot and bubbly and the cheese is melted.
  10. Let stand for a few minutes before serving.

Notes

  • For a make-ahead option, assemble the casserole up to step 7, cover tightly, and refrigerate for up to 24 hours. Add an extra 5-10 minutes to the baking time if baking from cold.
  • You can substitute rotisserie chicken for the cooked chicken breasts for an even quicker meal.
  • Add steamed broccoli or peas for extra vegetables.
