  • 1 pound rotini or farfalle pasta
  • 2 cups cooked, shredded, or cubed chicken breast
  • 1 head romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup homemade or store-bought croutons (or toasted breadcrumbs)

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop the cooking process. Set aside to cool completely.
  2. While the pasta cools, prepare the creamy Caesar dressing. In a small bowl, whisk together the mayonnaise, olive oil, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, black pepper, and salt until smooth.
  3. In a large bowl, combine the cooled pasta, cooked chicken, chopped romaine lettuce, and 1/2 cup of grated Parmesan cheese.
  4. Pour the prepared Caesar dressing over the pasta mixture. Toss gently until all ingredients are evenly coated.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is good for meal planning.
