1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup unsalted butter
1 cup chopped yellow onion
1/2 cup all-purpose flour
2 cups chicken broth
1 cup milk
1 teaspoon Dijon mustard
1/4 teaspoon paprika
4 cups broccoli florets, fresh or frozen
1 cup shredded cheddar cheese
1 cup crushed Ritz crackers
2 tablespoons melted butter
Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken, salt, and pepper. Cook until chicken is browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
In the same skillet, melt 1/2 cup butter over medium heat. Add onion and cook until softened, about 5 minutes.
Whisk in flour and cook for 1 minute, stirring constantly.
Gradually whisk in chicken broth and milk until smooth. Bring to a simmer, stirring constantly, until sauce thickens, about 5 minutes.
Stir in Dijon mustard and paprika.
Add broccoli florets and cheddar cheese to the sauce. Stir until cheese is melted and broccoli is coated.
Return the cooked chicken to the skillet and stir to combine with the sauce and broccoli.
In a small bowl, combine crushed Ritz crackers and 2 tablespoons melted butter. Sprinkle evenly over the top of the casserole.
Bake for 20-25 minutes, or until the topping is golden brown and the casserole is bubbly.
Notes
For a make-ahead option, assemble the casserole (without the cracker topping) and refrigerate for up to 2 days. Add the cracker topping just before baking and increase baking time by 5-10 minutes.
To freeze, assemble the casserole (without the cracker topping) in a freezer-safe dish. Cover tightly and freeze for up to 3 months. Thaw in the refrigerator overnight and bake as directed, adding the cracker topping before baking.
You can use rotisserie chicken for a shortcut.
For a gluten-free version, use gluten-free crackers and a gluten-free flour blend.
