Hibachi Chicken Fried Rice

Make restaurant-style chicken fried rice at home with buttery garlic notes, eggs, peas, and a sesame finish. This quick stir-fry uses day-old rice for the best texture and is perfect for a weeknight dinner.

  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken thighs, cut into 1/2-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup frozen peas and carrots mix
  • 2 large eggs, lightly beaten
  • 4 cups day-old cooked rice (preferably medium or long grain)
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 green onions, thinly sliced

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  2. Add butter to the skillet. Once melted, add minced garlic and cook until fragrant, about 30 seconds.
  3. Add the frozen peas and carrots to the skillet and cook for 2-3 minutes until tender-crisp.
  4. Push the vegetables to one side of the skillet. Pour the beaten eggs onto the empty side and scramble until cooked through. Break the eggs into smaller pieces.
  5. Add the cooked rice to the skillet. Break up any clumps with your spatula. Stir everything together.
  6. In a small bowl, whisk together soy sauce, oyster sauce, and sesame oil. Pour the sauce over the rice mixture.
  7. Add the cooked chicken back to the skillet. Stir everything to combine and heat through, about 3-5 minutes.
  8. Stir in the sliced green onions.
  9. Serve immediately.

Notes

  • Using day-old rice is key for the best fried rice texture. Freshly cooked rice will be too moist and sticky.
  • For a true hibachi flavor, ensure your skillet or wok is very hot before adding ingredients.
  • Adjust soy sauce to your preference.
  • You can substitute chicken breast for thighs if desired.
