1 pound ground chicken
1/2 cup finely chopped water chestnuts, drained
1/4 cup finely chopped mushrooms (shiitake or white button)
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/4 cup Hoisin sauce
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon rice vinegar
1 tablespoon brown sugar
1 teaspoon sesame oil
1/4 teaspoon black pepper
1/4 cup chopped green onions, divided
1 head butter lettuce or iceberg lettuce, leaves separated and washed
Optional garnish: Crispy fried rice noodles
Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is fully browned and no pink remains. Drain off any excess fat.
Add the water chestnuts, mushrooms, garlic, and ginger to the skillet. Cook for 3 to 4 minutes until the vegetables soften slightly.
In a small bowl, whisk together the Hoisin sauce, soy sauce, rice vinegar, brown sugar, sesame oil, and black pepper to create the sauce.
Pour the sauce mixture over the chicken and vegetables. Stir well to coat everything evenly. Cook for 1 to 2 minutes until the sauce thickens slightly.
Remove the skillet from the heat. Stir in half of the chopped green onions.
Arrange the lettuce leaves on a serving platter. Spoon the chicken mixture into the center of each lettuce cup.
Garnish with the remaining green onions and crispy noodles, if using. Serve immediately.
Notes
For a Whole30 compliant version, substitute the Hoisin sauce and soy sauce with compliant alternatives.
To achieve the restaurant texture, ensure you finely dice the chicken or use ground chicken.
