  • 4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus 1/4 cup for topping
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce (your favorite brand)
  • 8 ounces fresh mozzarella cheese, sliced
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
  2. Set up a standard breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine panko breadcrumbs, 1/2 cup grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  3. Dredge each pounded chicken cutlet first in the flour, shaking off any excess. Dip the floured cutlet into the egg mixture, allowing excess to drip off. Finally, press the cutlet firmly into the panko mixture to coat both sides completely.
  4. Place the breaded cutlets on the prepared baking sheet. Drizzle the tops lightly with olive oil.
  5. Bake for 15 minutes.
  6. Remove the baking sheet from the oven. Spoon about 2 tablespoons of marinara sauce over the top of each cutlet. Top each with slices of mozzarella cheese and a sprinkle of the remaining 1/4 cup Parmesan cheese.
  7. Return the chicken to the oven and bake for another 5 to 8 minutes, or until the cheese is melted, bubbly, and lightly golden, and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  8. Let the cheesy chicken rest for 5 minutes before serving over pasta or with a side salad.
