A quick and easy skillet chicken dinner with buttery egg noodles, perfect for a weeknight meal.

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces egg noodles
  • 2 cups chicken broth
  • 1/4 cup heavy cream (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Season the chicken pieces with garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add the seasoned chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. Add the egg noodles to the same skillet. Pour in the chicken broth. Bring to a boil, then reduce heat, cover, and simmer for about 8-10 minutes, or until noodles are tender and most of the liquid is absorbed.
  5. Stir in the heavy cream, if using, until the sauce thickens slightly.
  6. Return the cooked chicken to the skillet and toss to combine with the noodles and sauce.
  7. Garnish with fresh parsley before serving.

Notes

  • For a richer sauce, you can add a tablespoon of grated Parmesan cheese with the heavy cream.
  • If you don’t have chicken broth, you can use water and a bouillon cube.
