Instructions
Preheat your oven to 350 degrees F. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Prepare the cookie base: In a large bowl, beat the softened butter, 3/4 cup granulated sugar, and brown sugar until creamy. Beat in the 2 eggs one at a time, then add the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
Press two-thirds of the cookie dough evenly into the bottom of the prepared pan. Set the remaining one-third of the dough aside.
Prepare the cheesecake layer: In a medium bowl, beat the softened cream cheese and 1/2 cup granulated sugar until smooth. Beat in the 1 egg and 1/2 teaspoon vanilla extract until fully incorporated.
Spread the cheesecake mixture evenly over the cookie base layer in the pan.
Crumble the reserved one-third of the cookie dough over the top of the cheesecake layer.
Bake for 35 to 40 minutes, or until the edges of the cookie are golden brown and the cheesecake center is mostly set but still has a slight jiggle.
Let the bars cool completely in the pan on a wire rack. Cooling is important for clean cutting.
Once cool, use the parchment paper overhang to lift the bars out of the pan. Cut into squares or rectangles.
Notes
For a fudgier cookie layer, chill the dough for 30 minutes before pressing it into the pan.
