Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the cocoa powder, flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  5. Place the 1/2 cup of powdered sugar for rolling into a shallow dish.
  6. Scoop the dough into balls, about 1.5 tablespoons each.
  7. Roll each dough ball thoroughly in the powdered sugar until completely coated.
  8. Place the coated dough balls onto baking sheets lined with parchment paper, leaving about 2 inches between them.
  9. Bake at 350°F (175°C) for 10 to 12 minutes. The edges should look set, but the centers will still look slightly soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The cracks will deepen as they cool.
