Prepare this hearty, savory breakfast casserole the night before Christmas to enjoy a stress-free holiday morning. It features layers of eggs, cheese, sausage, and hash browns.

Ingredients

  • 1 pound breakfast sausage, cooked and drained
  • 1 (32 ounce) package frozen hash browns, thawed
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 10 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon dry mustard powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Lightly grease a 9×13 inch baking dish.
  2. Spread the cooked and drained sausage evenly over the bottom of the prepared dish.
  3. Spread the thawed hash browns over the sausage layer. Sprinkle with 1 cup of the cheddar cheese.
  4. In a large bowl, whisk together the eggs, milk, dry mustard powder, salt, and pepper until well combined.
  5. Pour the egg mixture evenly over the hash brown and cheese layers. Gently press down on the bread to submerge it slightly in the egg mixture.
  6. Cover the dish tightly with plastic wrap. Refrigerate for at least 8 hours, or overnight.
  7. When ready to bake, preheat your oven to 350 degrees Fahrenheit. Remove the plastic wrap.
  8. Top the casserole with the remaining 1/2 cup of cheddar cheese and the Monterey Jack cheese.
  9. Bake for 45 to 55 minutes, or until the casserole is puffed and a knife inserted near the center comes out clean.
  10. Let the Christmas Breakfast Casserole rest for 10 minutes before slicing and serving.

Notes

  • For a Crockpot Christmas Breakfast option, assemble the casserole as directed (do not bake). Place the assembled, uncooked casserole in a large slow cooker. Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • You can substitute bacon or ham for the sausage if you prefer a different meat.
  • This recipe is excellent for family size breakfast gatherings.
