1 cup water
1/2 cup unsalted butter
1/4 teaspoon salt
1 cup all-purpose flour
2 large eggs
1 teaspoon vanilla extract
Vegetable oil, for frying
1/2 cup granulated sugar
1 teaspoon ground cinnamon
Instructions
In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
Remove from heat and stir in flour until a smooth dough forms. Return to low heat and cook, stirring constantly, for 1 minute.
Transfer dough to a mixing bowl. Beat in eggs one at a time until fully incorporated. Stir in vanilla extract.
Pour vegetable oil into a deep skillet or Dutch oven to a depth of about 3 inches. Heat oil to 375°F (190°C).
Spoon dough into a piping bag fitted with a large star tip. Carefully pipe 4-6 inch strips of dough into the hot oil, cutting the dough with scissors. Do not overcrowd the pan.
Fry churros for 2-3 minutes per side, until golden brown and cooked through.
Remove churros with a slotted spoon and drain on paper towels.
In a shallow dish, combine granulated sugar and cinnamon. Toss warm churros in the cinnamon-sugar mixture until evenly coated.
Serve immediately with your favorite dipping sauce.

For a chocolate dipping sauce, melt 1 cup of semi-sweet chocolate chips with 2 tablespoons of butter in a microwave-safe bowl in 30-second intervals, stirring until smooth.
You can bake churros at 400°F (200°C) for 15-20 minutes, or until golden brown, for a less messy option.
