  • 3 Navel Oranges, peeled and segmented
  • 2 Grapefruits (pink or white), peeled and segmented
  • 3 Tangerines or Clementines, peeled and segmented
  • 1 cup Arugula or mixed greens (optional for savory version)
  • 1/4 cup Pistachios or Pecans, lightly toasted (optional for savory version)
  • 2 oz Goat Cheese, crumbled (optional for savory version)
  • For the Vinaigrette:
  • 3 tablespoons Fresh Orange Juice
  • 1 tablespoon Fresh Lemon Juice
  • 1 tablespoon Honey
  • 1/4 cup Olive Oil
  • Pinch of Salt
  • Freshly ground Black Pepper to taste

Instructions

  1. Prepare the Citrus: Carefully peel the oranges, grapefruits, and tangerines. Working over a bowl to catch the juices, use a sharp knife to cut between the membranes to release the segments. Set the segments aside and reserve any juice collected.
  2. Make the Vinaigrette: In a small jar, combine the reserved citrus juice (if using), fresh orange juice, lemon juice, and honey. Seal the jar and shake well until the honey dissolves. Slowly stream in the olive oil while whisking or shaking vigorously until the dressing emulsifies. Season with salt and pepper.
  3. Assemble the Fruit Salad: Place all the citrus segments in a large bowl. If you are making the pure fruit version, gently toss the fruit with half of the vinaigrette.
  4. Assemble the Savory Salad (Optional): If making the savory version, place the arugula in a serving bowl. Top with the citrus segments, toasted nuts, and crumbled goat cheese. Drizzle the remaining vinaigrette over the salad just before serving.
  5. Serve immediately for the best texture.
