Fudgy, high-protein brownie bites made with blended cottage cheese for a healthier dessert or post-workout snack.

  • 1 cup blended cottage cheese
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 1 scoop (30g) chocolate protein powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with mini muffin liners.
  2. In a blender, combine the blended cottage cheese, applesauce, maple syrup, and vanilla extract. Blend until smooth.
  3. In a medium bowl, whisk together the whole wheat flour, cocoa powder, protein powder, baking powder, and salt.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the chocolate chips.
  6. Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
  7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let the bites cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a gluten-free version, substitute a gluten-free all-purpose flour blend.
  • You can add a tablespoon of instant coffee to the batter to enhance the chocolate flavor.
  • Store cooled brownie bites in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
