- 1 cup blended cottage cheese
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup whole wheat flour
- 1/4 cup unsweetened cocoa powder
- 1 scoop (30g) chocolate protein powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with mini muffin liners.
- In a blender, combine the blended cottage cheese, applesauce, maple syrup, and vanilla extract. Blend until smooth.
- In a medium bowl, whisk together the whole wheat flour, cocoa powder, protein powder, baking powder, and salt.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Fold in the chocolate chips.
- Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let the bites cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
