Easy Slow Cooker Cream Cheese Chicken Chili

Make this comforting, creamy white chicken chili in your slow cooker. It uses simple ingredients and delivers a rich flavor perfect for a weeknight dinner or meal prep.

  • 3 cups cooked, shredded chicken breast
  • 1 (15 ounce) can Great Northern beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
  • 4 cups chicken broth
  • 1 (8 ounce) package cream cheese, cut into cubes
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: shredded Monterey Jack cheese, sour cream, fresh cilantro

Instructions

  1. Place the shredded chicken, Great Northern beans, cannellini beans, diced green chilies, Rotel, chicken broth, cumin, garlic powder, salt, and pepper into the basin of your slow cooker. Stir to combine all ingredients.
  2. Place the cubes of cream cheese evenly over the top of the chili mixture. Do not stir them in yet.
  3. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  4. About 30 minutes before serving, remove the lid and stir the chili until the cream cheese is completely melted and the chili is smooth and creamy.
  5. Taste the chili and adjust salt and pepper if needed.
  6. Serve hot with your favorite toppings.

Notes

  • For a thicker chili, remove about 1 cup of the liquid mixture before adding the cream cheese, mix 2 tablespoons of cornstarch with the liquid, and then stir it back into the chili during the final 30 minutes of cooking.
  • This chili freezes well. Cool completely before storing in airtight containers for up to 3 months.
  • If you prefer a spicier chili, add 1/2 teaspoon of cayenne pepper or a dash of your favorite hot sauce with the other seasonings.
