  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Season the cut chicken pieces evenly with the Cajun seasoning. Add salt and pepper if your seasoning blend is low in sodium.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the seasoned chicken to the hot skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  4. Reduce the heat to medium. Add the chopped onion to the same skillet and cook until softened, about 3 minutes.

  8. Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and slightly thickened.
  9. Return the cooked chicken to the skillet. Stir to coat the chicken completely in the creamy sauce. Heat through for 1-2 minutes.
