A refreshing and creamy cucumber salad with a tangy dressing, perfect for BBQs and summer meals.

Ingredients

  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon white vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large cucumbers, thinly sliced
  • 1/4 cup red onion, thinly sliced

Instructions

  1. In a medium bowl, whisk together sour cream, mayonnaise, dill, chives, vinegar, Dijon mustard, salt, and pepper until smooth.
  2. Add the sliced cucumbers and red onion to the bowl.
  3. Gently toss to coat the cucumbers and onion evenly with the dressing.
  4. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a lighter version, you can substitute Greek yogurt for some of the sour cream.
  • Chill the salad for at least 30 minutes for best flavor.
  • This salad can be made a few hours ahead of time.
