  • 2 cups frozen or fresh sweet corn kernels
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional garnish: Fresh thyme or chopped chives

Instructions

  1. Place a large skillet over medium heat. Add the corn kernels to the dry skillet and cook for 5 to 7 minutes, stirring occasionally, until some kernels start to lightly brown. This step removes excess moisture.
  2. Reduce the heat to medium-low. Add the butter to the skillet and let it melt completely, stirring to coat the corn.
  3. Pour in the heavy cream and add the honey, salt, and pepper. Stir everything together well.
  4. Continue to cook, stirring frequently, for about 5 to 8 minutes, or until the sauce has thickened and coats the corn kernels. Do not let the mixture boil rapidly.
  5. Remove the skillet from the heat. Taste and adjust salt and pepper if needed.
  6. Serve immediately, garnished with fresh thyme or chives if desired.

  • For a richer flavor, use fresh sweet corn when it is in season.
  • If you prefer a less sweet dish, reduce the honey to 1 tablespoon.
