  • 1 tablespoon olive oil

  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 8 ounces dry pasta (like penne or rotini)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 2 cups fresh spinach

Instructions

  1. Season the chicken pieces with salt, pepper, Italian seasoning, and garlic powder.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken and set it aside.
  3. Add the diced onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and add the can of diced tomatoes (with their liquid). Bring the mixture to a simmer.
  5. Add the dry pasta to the simmering liquid. Stir well to prevent sticking. Cover the pot and cook according to the pasta package directions, usually about 10 to 12 minutes, stirring occasionally.
  6. Once the pasta is nearly tender, stir in the heavy cream, grated Parmesan cheese, and chopped sun-dried tomatoes. Stir until the sauce thickens slightly.
  7. Return the cooked chicken to the pot. Stir in the fresh spinach until it wilts into the sauce.
  8. Taste and adjust seasoning if needed. Serve this flavorful chicken pasta immediately.
