Make genuinely crispy chicken wings in your air fryer using a simple baking powder trick. This recipe delivers maximum crunch without deep frying, perfect for game day or quick weeknight meals.

Ingredients

Scale
  • 2 lbs chicken wings (flats and drumettes separated)
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Pat the chicken wings completely dry using paper towels. This step is crucial for crispiness.
  2. In a medium bowl, combine the baking powder, salt, garlic powder, onion powder, black pepper, and paprika.
  3. Add the dried chicken wings to the bowl. Toss thoroughly until every piece is evenly coated with the dry rub mixture.
  4. Preheat your air fryer to 380°F (195°C) for 5 minutes.
  5. Arrange the wings in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
  6. Air fry for 20 minutes.
  7. After 20 minutes, carefully flip the wings. Increase the air fryer temperature to 400°F (200°C).
  8. Continue to cook for another 5 to 8 minutes, or until the wings are deep golden brown and extremely crispy.
  9. Remove from the air fryer and serve immediately with your preferred sauce or enjoy the dry rub as is.

Notes

  • Using aluminum-free baking powder provides the best results for skin crisping.
  • For extra flavor, you can toss the cooked wings in your favorite sauce, like buffalo or BBQ, after they come out of the air fryer.
  • If you are planning meals for the week, this recipe pairs well with simple side dishes often found in meal planning guides.
