Make perfectly crispy, golden-brown breakfast potatoes using this simple oven-roasting method. These potatoes are tender inside and seasoned with garlic and paprika, making them a flavorful side dish for any morning meal.

Ingredients

Scale
  • 2 lbs Yukon Gold potatoes, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Place the cubed potatoes in a large bowl. Drizzle with olive oil and toss to coat evenly.
  3. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, oregano, salt, and pepper.
  4. Sprinkle the seasoning mixture over the potatoes and toss again until every piece is coated with the spices.
  5. Spread the seasoned potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to promote crisping.
  6. Roast for 20 minutes. Remove the pan from the oven and carefully flip the potatoes.
  7. Return to the oven and roast for another 15 to 20 minutes, or until the potatoes are deeply golden brown and crispy on the edges.
  8. If using, toss the hot potatoes with minced fresh garlic during the last 5 minutes of cooking.
  9. Serve immediately as a side dish for eggs or bacon.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 30 minutes before drying them completely. Water removal is key to crisp texture.
  • If you prefer a skillet method, heat 3 tablespoons of oil in a large cast-iron skillet over medium-high heat. Cook the potatoes in batches, turning occasionally, until golden brown, about 15-20 minutes total.
  • These potatoes work well with meal planning; reheat leftovers in an air fryer for 5 minutes to restore crispness.
