This slow cooker recipe delivers ultra-creamy garlic and sun-dried tomato chicken with minimal effort. It’s a perfect weeknight dinner that pairs well with pasta or rice.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 (7 oz) jar sun-dried tomatoes in oil, drained and chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp chopped fresh basil

Instructions

  1. Pat the chicken breasts dry and season them with Italian seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden brown.
  3. Transfer the seared chicken to your slow cooker.
  4. Add the chopped sun-dried tomatoes and minced garlic to the slow cooker.
  5. Pour in the chicken broth and heavy cream. Stir to combine.
  6. Cover and cook on low for 4-6 hours, or until the chicken is cooked through and tender.
  7. Stir in the grated Parmesan cheese until melted and the sauce is creamy.
  8. Garnish with fresh basil before serving.
