Crockpot Beef Tips and Noodles

A simple and comforting slow cooker recipe for tender beef tips in a rich gravy served over buttery egg noodles. This set-and-forget meal is perfect for weeknights.

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup cornstarch
  • 1/4 cup cold water
  • 1 pound egg noodles
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Pat the beef cubes dry with paper towels. Season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides. Transfer the beef to your slow cooker.
  3. Add the chopped onion and minced garlic to the skillet. Cook until softened, about 5 minutes. Add the cooked onion and garlic to the slow cooker.
  4. Pour in the beef broth and Worcestershire sauce. Add the dried thyme. Stir to combine.
  5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
  6. About 30 minutes before serving, cook the egg noodles according to package directions. Drain and toss with butter.
  7. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  8. Stir the cornstarch slurry into the slow cooker with the beef and gravy. Stir until the gravy thickens.
  9. Serve the beef tips and gravy over the buttered egg noodles. Garnish with fresh parsley.

Notes

  • For a richer gravy, you can add a tablespoon of tomato paste with the onions and garlic.
  • If you prefer a thicker gravy, you can increase the cornstarch to 3 tablespoons.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
