Make tender, juicy crockpot chicken breasts perfect for meal prep. This simple recipe uses basic seasonings and is ideal for shredding or slicing to use in tacos, salads, casseroles, and more.

  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 cup chicken broth or water

Instructions

  1. Place chicken breasts in the bottom of your slow cooker.
  2. In a small bowl, mix together salt, pepper, garlic powder, onion powder, and paprika.
  3. Sprinkle the seasoning mixture evenly over the chicken breasts.
  4. Pour chicken broth or water into the slow cooker.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Remove chicken from the slow cooker. You can shred it with two forks or slice it.
  7. Use the cooked chicken immediately or store it for meal prep.

Notes

  • For extra flavor, you can add a sliced onion or a few sprigs of fresh herbs like rosemary or thyme to the slow cooker.
  • If you prefer a sauce, you can thicken the cooking liquid by mixing 1 tablespoon of cornstarch with 2 tablespoons of cold water and stirring it into the hot liquid in the slow cooker on the ‘warm’ setting until thickened.
