Make this easy Crockpot French Onion Meatloaf for a tender, juicy comfort meal. Slow cooking infuses the beef with rich French onion soup flavor, and topping it with Swiss cheese makes it a family favorite.

  • 2 pounds ground beef
  • 1 (10.5 ounce) can condensed French onion soup, undiluted
  • 1/2 cup bread crumbs
  • 1/4 cup milk
  • 1 large egg, lightly beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup finely chopped onion (optional, for extra flavor)
  • 4 slices Swiss cheese

Instructions

  1. In a large bowl, combine the ground beef, French onion soup, bread crumbs, milk, egg, Worcestershire sauce, thyme, salt, pepper, and chopped onion if you are using them. Mix gently with your hands until just combined. Do not overmix.
  2. Shape the meat mixture into a loaf shape and place it in the bottom of a 5 or 6-quart slow cooker.
  3. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 2.5 to 3 hours, until the meatloaf is cooked through.
  4. About 15 minutes before the cooking time ends, remove the lid and place the Swiss cheese slices evenly over the top of the meatloaf. Replace the lid and allow the cheese to melt completely.
  5. Carefully drain off any excess liquid from the slow cooker before serving. Slice and serve this juicy meatloaf immediately.

Notes

  • For an extra savory flavor, use one packet of dry onion soup mix in addition to the canned soup.
  • Serve this meatloaf with mashed potatoes or egg noodles to soak up the flavorful juices.
  • If you want a slightly firmer meatloaf, you can form it into a loaf shape and place it on a rack inside the slow cooker instead of directly on the bottom.
