Ingredients

Scale
  • 2 lbs yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme

  • 8 slices Gruyere cheese
  • 2 tablespoons butter

Instructions

  1. Place sliced onions in your slow cooker.
  2. Add minced garlic, beef broth, white wine, Worcestershire sauce, thyme, pepper, and salt.
  3. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until onions are very tender and caramelized.
  4. Preheat your broiler.
  5. Ladle soup into oven-safe bowls.
  6. Top each bowl with a slice of baguette.
  7. Place 1-2 slices of Gruyere cheese over the bread.
  8. Broil for 2-3 minutes, until cheese is melted and golden brown.
  9. Serve immediately.

Notes

  • For an extra rich flavor, you can deglaze the pot with a splash of brandy before adding the beef broth.
  • If you don’t have oven-safe bowls, you can toast the bread and melt the cheese on a baking sheet and then float it on top of the soup.
  • This soup is a great make-ahead option for weeknight meals.
