A simple and creamy slow cooker pasta dish with chicken in a rich garlic Parmesan sauce. This dump-and-go recipe is perfect for busy weeknights and feeds a crowd.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 (16 ounce) package pasta (penne, fettuccine, or rotini)
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Place chicken breasts in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the cream of chicken soup, chicken broth, Parmesan cheese, sour cream, minced garlic, and Italian seasoning.
  3. Pour the soup mixture over the chicken in the slow cooker.
  4. Season with salt and pepper.
  5. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until the chicken is cooked through.
  6. Remove the chicken from the slow cooker and shred it with two forks.
  7. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
  8. Cook pasta according to package directions. Drain well.
  9. Add the drained pasta to the slow cooker and stir to coat with the sauce.
  10. Serve hot, garnished with fresh parsley if desired.

Notes

  • For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
