Ingredients
Scale
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
3 cloves garlic, minced
1/2 cup chicken broth
1/2 cup heavy cream
3 tablespoons Dijon mustard
1 tablespoon whole grain mustard (optional, for texture)
1 teaspoon honey (optional)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season the chicken breasts on both sides with salt, pepper, and dried thyme.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5 to 7 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F or 74°C). Remove the chicken from the skillet and set aside on a plate.
Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
Whisk in the heavy cream, Dijon mustard, whole grain mustard (if using), and honey (if using). Stir constantly until the sauce thickens slightly, about 2 to 3 minutes.
Return the cooked chicken breasts to the skillet. Spoon the sauce over the chicken. Let it simmer for 1 minute to heat through.
Garnish with fresh parsley before serving. This pairs well with rice or steamed vegetables for a complete meal.
Notes
For a one-pan meal, add sliced potatoes or mushrooms to the skillet after searing the chicken and cook them partially before adding the sauce ingredients.
