A quick and cheesy Tex-Mex casserole with seasoned ground beef, tomatoes, and crushed Doritos, perfect for busy families and game days.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) Rotel diced tomatoes and green chilies, undrained
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (9 oz) Doritos, crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
  3. Stir in the taco seasoning and Rotel tomatoes with their liquid. Cook for 2 minutes, stirring occasionally.
  4. Remove the skillet from the heat. Stir in the cream of chicken soup and sour cream until well combined.
  5. Fold in 1 cup of the shredded cheddar cheese.
  6. Pour the mixture into a 9×13 inch baking dish.
  7. Top evenly with the crushed Doritos.
  8. Sprinkle the remaining 1 cup of cheddar cheese over the Doritos.
  9. Bake for 20-25 minutes, or until the casserole is hot and bubbly and the cheese is melted.

Notes

  • For a chicken version, use 2 cups of shredded cooked chicken instead of ground beef.
  • You can assemble this casserole ahead of time and freeze it. Thaw overnight in the refrigerator before baking. Add a few extra minutes to the baking time if baking from frozen.
  • Serve with your favorite Tex-Mex toppings like salsa, guacamole, or extra sour cream.
