Easy Baked Apple Fritters with Cinnamon Glaze

Make these easy baked apple fritters for a cozy, simple treat. They use fresh apples and warm spices, topped with a sweet cinnamon glaze. This baked version skips the frying for a quicker, comforting breakfast or dessert.

  • 2 large Granny Smith apples, peeled, cored, and finely diced
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • For the Cinnamon Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin or line it with paper liners.
  2. In a medium bowl, combine the diced apples, 1/2 cup of the granulated sugar, 1 teaspoon of cinnamon, and 1/4 teaspoon of nutmeg. Set this aside.
  3. In a separate large bowl, whisk together the flour, baking powder, salt, and the remaining 1/4 cup of granulated sugar.
  4. In a small bowl, whisk the egg, 1/2 cup milk, melted butter, and vanilla extract until combined.
  5. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  6. Gently fold the apple mixture into the batter until the apples are evenly distributed.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the fritters cool slightly, prepare the glaze. Whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of cinnamon until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick.
  10. Once the fritters are cool enough to handle, drizzle the cinnamon glaze over the tops. Serve warm or at room temperature.

Notes

  • For a slightly tangier glaze, substitute 1 tablespoon of the milk with apple cider vinegar.
  • If you prefer smaller treats, you can make Apple Fritter Bites by using a mini muffin tin and reducing the baking time to about 12 to 14 minutes.
  • You can substitute Granny Smith apples with Honeycrisp or Gala for a sweeter flavor profile.
