2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup boiling water
For the Ganache:
1 cup heavy cream
8 ounces semi-sweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.
Carefully stir in the boiling water. The batter will be thin.
Pour the batter into the prepared baking pan.
Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
While the cake cools, prepare the ganache. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
Pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit for 5 minutes, then whisk until smooth and glossy.
Pour the ganache over the cooled cake. Spread evenly.
Decorate as desired with sprinkles or chocolate shavings.
Notes
For a richer flavor, you can use dark cocoa powder.
Ensure your buttermilk is at room temperature for best results.
If you don’t have buttermilk, you can make a substitute by adding 1 tablespoon of white vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes.
For a simple decoration, use a fork to create swirls in the ganache before it sets.
