1 wheel (8 ounces) brie cheese, cut into small cubes
1/2 cup cranberry sauce (whole berry or jellied)
1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Unfold the thawed puff pastry sheets onto a lightly floured surface. Cut each sheet into 9 equal squares.
Place one cube of brie cheese onto the center of each pastry square.
Place about 1/2 teaspoon of cranberry sauce on top of the brie in each square.
Fold the corners of the pastry up over the filling to create a pouch or bundle. Pinch the edges together to seal the bite. You can also cut the pastry into circles and place the filling in the center, folding the edges up slightly to form a cup shape.
Place the sealed bites onto the prepared baking sheet.
Brush the tops of the pastry bundles lightly with the beaten egg wash.
Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed.
Remove from the oven and let cool slightly before serving warm. These pair well with crackers, a simple addition to your meal planning.
Notes
For extra flavor, sprinkle a few chopped pecans or a tiny sprig of fresh rosemary on top of the cranberry sauce before baking.
If you use crescent roll dough instead of puff pastry, press the dough into mini muffin tins to form cups before filling.
You can assemble these bites up to 4 hours ahead of time. Keep them covered in the refrigerator and bake just before guests arrive.
