Make this easy, hearty Mediterranean Farro Salad featuring chewy farro, crumbled feta, fresh vegetables, and a bright lemon vinaigrette. It is excellent for meal prep, a light lunch, or a satisfying side dish.

  • 1 cup pearled farro
  • 3 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons olive oil (for vinaigrette)
  • 3 tablespoons fresh lemon juice (for vinaigrette)
  • 1 teaspoon Dijon mustard (for vinaigrette)
  • 1/2 teaspoon dried oregano (for vinaigrette)
  • Salt and black pepper to taste

Instructions

  1. Rinse the farro under cold water. Combine farro and water or broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 25 to 30 minutes, or until the farro is tender but still chewy. Drain any excess liquid and let the farro cool slightly.
  2. While the farro cooks, prepare the vinaigrette. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and dried oregano. Season with salt and pepper.
  3. In a large bowl, combine the cooled farro, halved cherry tomatoes, diced cucumber, Kalamata olives, and fresh parsley.
  4. Pour the lemon vinaigrette over the farro and vegetable mixture. Toss gently to coat everything evenly.
  5. Gently fold in the crumbled feta cheese.
  6. Taste and adjust seasoning if needed. Serve the salad immediately, or chill for at least 30 minutes to allow the flavors to meld. This salad is great for meal planning.

  • This salad holds up well for meal prep and tastes better after chilling for a few hours.
  • For added protein, you can include 1 cup of drained, rinsed chickpeas.
